Oh YUMMO.
My inaugural Unexpectedly Delicious post will be featuring Taco Casserole!
Simple.
Quick.
Delicious.
Ready?
For Taco Casserole you will need the following ingredients:
1 bag of Tortilla Chips (you will not the use the whole bag but will need enough to line the bottom of a 9 x 13 pan with)
1/2 TBSP of Olive Oil (I use EVOO)
2-3 Garlic Cloves minced (as much or as little to your taste preference)
1/2 onion chopped (again as much or as little to your taste preference)
1 lb ground beef (Fed 3 adults and a 2 year old for two nights in a row – so if you have a bigger family add more beef accordingly)
1 package of Taco Seasoning (again you can use as much or as little of this as you see fit for you family)
1 can of black beans drained
1 cup of salsa
1 cup shredded cheese (I personally went a little crazy with the cheese but you can add to taste)
Other toppings to taste: tomatoes, sour cream, shredded lettuce
Recipe:
In a large skillet, heat olive oil and begin to saute onion and garlic for about 5 minutes or until soft. Add meat and taco seasoning. Brown meat. Add beans and salsa. Mix well and allow to cook until thickened.
Line the bottom of a 9 x 13 baking dish with tortilla chip (I suggest crushing them with your hands to a bite size portion)
Spread meat mixture over tortilla chips.
Top with shredded cheese. If you’re feeling froggy, you can top with jalapenos or green chilies as well.
Bake uncovered for 15-20 minutes – or until the cheese has melted to a bubbly-goodness.

Sounds really good! WIsh you had a picture of it for me to drool over
Well my family gorfed it down before I could get a picture.. and then as I wrote this post I was eating the last piece… it was only as I was taking the last bite that I realized I could of taken a picture of that last piece for this post! The next post will most definitely have a picture!!
